Quinoa Chicken & veggies Casserole

This one pan dish is easy to prepare ahead of time and makes great left over lunches or no fry Stir Frys

 

In a casserole dish ad
1 cup rinsed Quinoa,
1 cup vegetable or chicken broth
1 cup water
2c ups fresh or frozen chopped veggies
2-4 chicken breasts seasoned and bake at 375 for 30 min
